Our Plaid Community Garden is producing way more than we ever expected! We want to share with you a recipe from our team that uses real, homegrown produce!
Chelsea Smith, Plaid's Key Account Coordinator, has a delicious organic take on pasta salad that you'll FALL in love with!
Chelsea's Famous Tortellini Pasta Salad
Ingredients:
+ 1 package of tortellini, cooked (I used three cheese!)
+ 1-2 ripe tomatoes (one large or two medium/small), chopped
+ 1 large cucumber, chopped
+ 4-6 slices of cooked bacon, chopped
+ Feta cheese crumbles (about 1/4-1/2 cup)
+ Zesty Italian dressing (about 1/4 cup)
+ Salt & pepper to taste
Step 1: Boil the package of tortellini, following label instructions.
Step 2: Drain pasta and cool, and then add to a bowl with tomato, cucumber, and bacon.
Step 3: Add feta cheese crumbles, zesty Italian dressing, and toss!
Step 4: Salt & pepper can be added as needed. Enjoy! :)
